"Indonesian" Chocolate Chip Cookies

The dark Indonesian palm sugar (gula jawa) is what really makes this recipe shine, however it can be rather challenging to find in the US. It comes in plugs which have to be carefully shaved down with a knife, but the incredible flavor it has is more than worth the work involved. If you can't find it at your local Asian market, dark brown sugar works decently as well.

General Yinzer's Chicken

So, I decided to tweak my usual General Tso's, but mainly I changed a few things around because I didn't have everything that I usually use. I the course of making it, I used Heinz Malt Vinegar, which is a Pittsburgh Favorite, hence "Yinzer" in the name. It has a tangy yet sweet flavor with the malt vinegar coming through with every bite. I serve it over rice with broccoli. Mmmmmmm.

This was inspired by a recipe on SimplyRecipes.com. I don't usually plan on left overs for this dish because I like the bok choy cooked fresh so it is tender crisp. You can reduce prep time by using frozen onion and mushrooms and jarred garlic. To chop bok choy: Trim the rough edge off the root ends of the bok choy, then cut accross the stem just below the leaf. Slice the white stem portion into 3 or 4 strips, then cut accross to dice. Slice the leafy top crosswise and then cut each strip into 1 inch pieces.

Zuo Zongtang Ji (General Tso's Chicken)

This dish is named after General Tso Tsung-tang (Cantonese), or Zuo Zongtang (Mandarin), a Qing dynasty general and statesman from Hunan Province. The recipe was invented by Taiwan-based Hunan cuisine chef Peng Chang-kuei (Peng Jia). Peng Jia was the Nationalist government banquets' chef and fled with Chiang Kai-shek's forces to Taiwan during the Chinese Civil War. He continued his career as official chef for the government until 1973 when he moved to New York to open a restaurant, Peng's Restaurant on East 44th Street. That was where Peng Jia modified a traditional dish to create General Tso's Chicken and made it the house specialty in spite of the dish's commonplace ingredients. The popularity of the dish has now led to it being "adopted" by local Hunanese chefs, perhaps as an acknowledgment of the dish's unique status, upon which the international reputation of Hunanese cuisine was largely based. NOTE: this dish makes enough sauce for a light coating. Double the sauce, if you want.

Slow Cooker Red Braised Pork Ribs

"Red braising" is a classic Chinese technique of slowly cooking meat in a flavorful stock rich with soy sauce, which makes the braising liquid reddish. Since it's already a slow cooking method, I've adapted it to the crock pot. This is a SMALL recipe, enough for two people. It WILL NOT scale up well - larger quantities will not need as much liquid as this would produce.

I tried making these wings for a party, everyone loved them! Don't let the smell of the fish sauce scare you, the flavor is wonderful when cooked. I found that the longer you marinate the chicken in the sauce before cooking, the better. I let mine sit in the fridge overnight for at least 8 hours before cooking. Have used this recipy many times over. If you don't have fresh lemongrass, can substitute dry lemongrass, found that works just as well

Nearly 1,000 Retailers Listed in 9-Million-Pound Beef Recall

The U.S. Department of Agriculture’s list of retailers which received about 8.7 million pounds of now-recalled meat from Rancho Feeding Corporation over the course of 2013 continues to expand.


The initial list posted on Feb. 12 consisted of neighborhood markets in California and Pastoral Plate, a meat retailer whose San Francisco Bay Area pick-up locations received some of the recalled product.


Since then, the list has expanded to include a handful of retailers in Alabama, Florida, Mississippi, New Mexico, Oregon and Washington. The number of California locations now tops 970.


There is still no indication of where the product was sold in Illinois or Texas, as indicated in the initial recall notice.

California Issues Warning Against Pesticide-Tainted Cactus

The California Department of Public Health is warning people not to eat cactus imported from Mexico that were sold at specific retail and wholesale locations around the state. The cactus has bee found to contain unapproved pesticides.


A recent routine surveillance sample collected by the California Department of Pesticide Regulation isolated as much as 5.8 parts per million of Monocrotophos, an organophosphate based pesticide that has been barred from use in the United States since 1989. The agency immediately removed all of the product it could locate from store shelves and distribution centers. It has been quarantined and/or destroyed so that it doesn’t pose a threat to consumers.


The contaminated cactus was sold and offered for sale to consumers and wholesale customers at:



  • La Superior SuperMercados in Sacramento, Stockton, Woodland and Pittsburg between 2/6/2014 and 2/12/2014

  • Mercado del Valle in Concord between 2/6/2014 and 2/12/2014

  • La Sucursal Produce located on Central Avenue in Los Angeles on 2/6/2014

  • Fresh American Produce located on Mission Road in Los Angeles on 2/7/2014

  • J&L Produce located on Central Avenue in Los Angeles on 2/6/2014


Whole cases of the cactus purchased from the wholesale produce companies were likely labeled with a supplier sticker that stated “Comercializadora De Chiles, Selectos Nieto S. De R.L. De C.V.” Product sold in the retail stores was sold in bulk bins without any specific branding or labeling.


If consumers have any of this product remaining in their possession, they should return it to the place of purchase or dispose of it in the garbage.


Symptoms of acute poisoning may include sweating, headache, weakness, nausea, vomiting, hypersalivation, abdominal cramps, and diarrhea. Consumption of Monocrotophos can lead to neurotoxicity and permanent nerve damage.


No illnesses have been reported to date. However, due to the time involved in tracing an illness back to a specific food product, it is impossible to say whether or not any illnesses have occurred.


California health officials are working with the U.S. Food and Drug Administration to identify the growers and importers responsible for shipping pesticide contaminated cactus into the United States so that future shipments can be examined and verified that they are

in compliance before making their way into the marketplace.


Anyone who consumed cactus and experienced symptoms of illness is advised to contact a healthcare provider.

Beef Producer Announces Own Recall in Connection to Rancho Feeding Corp

LeftCoast GrassFed is recalling all its beef processed in 2013, in cooperation with the U.S. Department of Agriculture’s investigation into Rancho Feeding Corporation – the facility that processes many of the company’s cattle.


Rancho Feeding Corporation of Petaluma, CA, recently recalled approximately 8,742,700 pounds of beef because it processed diseased and unsound animals and carried out these activities without the benefit or full benefit of federal inspection.


LeftCoast GrassFed said it had contracted with Rancho to process cattle “on a handful of days” in the summer and fall of 2013. “While we have been provided no evidence that our product has been compromised and there have been no reported illnesses from the consumption of our product, the safety and health of our customers is our utmost concern,” read a statement on the company’s website.


“We are sorry for this inconvenience and saddened by the waste of millions of pounds of meat, some of which, like ours, was raised with meticulous care and attention to the health and well-being of the animals that produced it.”


LeftCoast GrassFed is asking customers how purchased the recalled product to return it for a full refund.

Retailer List in 9-Million-Pound Beef Recall Expands

The U.S. Department of Agriculture is piecing together a list of retailers to which 8.7 million pounds of recalled meat had been sent over the course of 2013.


While up until Wednesday the recall list has consisted of neighborhood markets, one national retailer has been added: Pastoral Plate, a meat retailer whose San Francisco bay pick-up locations received some of the recalled product.


Still, the remainder of the list consists of neighborhood markets in California. There is still no indication of where the product was sold in Florida, Illinois and Texas, as indicated in the initial recall notice.

Bueno Foods Recalls Frozen Green Chile For Possible Listeria Contamination

Frozen, not-ready-to-eat green chile sold at most retail grocery stores in the the Southwest were recalled Tuesday by the manufacturer, Albuquerque-based Bueno Foods.


In its uncooked, raw state, the green chile might be contaminated with low levels of the potentially deadly Listeria monocytogenes. However, testing performed on samples of the product cooked per the validated cooking instructions on the product’s label showed no Listeria present.


Nevertheless, the company opted to conduct a Class 3 recall of the product, meaning it is unlikely to poise any risk to public health. At the time of the recall action on Tuesday, there had been no reports indicating that the green chile has caused any illness.


Microorganisms including Listeria may naturally be present in not-ready-to-eat agricultural products, including other frozen vegetables, which is why food products such as frozen green chile should be cooked to 165 degrees F. prior to consumption.


Bueno Foods is working to resolve potential issues and expects to have its green chile products back in stores in two weeks.

Raw Goat Milk Recalled in Washington for E. Coli

A Washington state dairy, the Laughing Goat, is recalling its Grade A raw goat milk due to potential E. coli contamination.


The recalled milk was sold in pint, quart, and half-gallon plastic containers with green caps bearing best-by dates between Feb. 11 and Feb. 19. The milk was sold at retail locations in Washington’s Thurston, Pierce, Lewis and King counties.


The contamination was discovered via routine monthly pathogen testing by the Washington State Department of Agriculture.


No illnesses have been reported. However, due to the time involved with tracing an illness back to a specific food product, it is impossible to say whether or not illnesses have occurred.

Tofu Hoisin With Broccoli, Red Pepper and Walnuts

This recipe takes a little more prep time than most of my other recipes but it's so delicious I don't mind. This is adapted from a recipe in Jeanne Lemlin's "Vegetarian Pleasures." I modified it so it is more in keeping with our Nutritarian eating style. To shorten prep time, you can use frozen broccoli and jarred garlic. You can serve it over whole grain rice if you wish. Pressing tofu: Cut it into 1/2 inch slices. Lay the slices out on a clean kitchen towel that has been folded in half or a couple of layers of paper towel. Fold the kitchen towel over the tofu slices or place additional paper towels on top. Cover with a small cutting board and place 6 to 8 cans on top to weight it down. Let tofu sit at least 30 minutes before cutting it into 1/2 inch cubes.

Peanuts found in bag of Almonds

Vitamin Cottage Natural Food Markets, Inc., a Lakewood, Colorado based natural grocery chain, is recalling one lot of six ounce packages of Natural Grocers brand Dark Chocolate Almonds with the Julian packed-on date 13-351 because some bags in this lot may contain dark chocolate covered peanuts which are not declared on the label. People who have an allergy to peanuts run the risk of serious or life-threatening allergic reaction if they consume this product.


The recalled product lot is comprised of 1,091 six-ounce bags bearing UPC code 0-0008265007-0 and the Julian packed-on date “13-351″. The dark chocolate covered peanuts are similar in color and sheen to the almonds, but the peanuts are about one-half size compared to the almonds. The product was distributed to some of Natural Grocers’ 75 stores located in Arizona, Colorado, Idaho, Kansas, Missouri, Montana, Nebraska, New Mexico, Oklahoma, Oregon, Texas, Utah and Wyoming in late December, 2013. Only packages bearing the Julian packed on date “13-351″ are subject to recall. The dark chocolate covered almonds used to produce this lot were received in sealed cases from our supplier. Out of an abundance of caution, Natural Grocers is suspending sales of all lots of dark chocolate covered almond products from this supplier.


The problem was reported to the company by a customer who discovered some dark chocolate covered peanuts inside a package. The product label displays a warning that the packaging facility also packages products containing tree nuts, peanuts and other allergens. The company has received no reports of adverse reactions to date due to consumption of these products.

Jerky Recall Prompted by “Processing Deviation”

Wyoming Authentic Products, LLC, a Cody, Wyo. establishment, is recalling approximately 365 pounds of beef jerky products due to a processing deviation, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.


The Wyoming Gourmet Beef products were produced on various dates between November 4 and December 18, 2013. The following products are subject to recall:


3.5-oz. (CRYOVACED) packages of “ALL NATURAL ANGUS ORIGINAL FLAVOR JERKY” with case code “05AE30811”


3.5-oz. (CRYOVACED) packages of “ALL NATURAL ANGUS PEPPERED FLAVOR JERKY” with case codes “06AE30821” , “05AE31021” , “05AE31711” or “05EIJ32511”


3.5-oz. (CRYOVACED) packages of “ALL NATURAL ANGUS HONEY FLAVOR JERKY” with case code “04AE30921”


The products subject to recall bear the establishment number “EST. 44972” inside the USDA mark of inspection. These products were sold at retail in Colorado, Utah, Washington and Wyoming, as well as Internet sales to individuals.


The problem was discovered by the company, who then brought it to the attention of FSIS. FSIS and the company have received no reports of illness due to consumption of these products. Anyone concerned about an illness should contact a healthcare provider.

Since I only used a scant 1/4 cup relish, I was afraid it would not be hot enough, and I did not want to taste it to check the flavor. It took forever to get there. Bacon Spread Recalled in Canada Over Botulism Concerns

“Bacon by Brad Smoliak” bacon spread sold in Alberta is being recalled due to potentially permitting the growth of clostridium botulinum, the bacterium which casues botulism, according to CBC News.


The problem was detected through testing done by the Canadian Food Inspection Agency (CFIA).


The recalled product comes in 125 gram jars with best-before dates of May 14, 2014 and June 14, 2014. Customers who purchased the product are urged to throw it away or return it to the store for a refund.


A clostridium-contaminated product will not taste or smell different from a non-contaminated, making it impossible to detect with the senses.


Symptoms of botulism include double vision, slurred speech, difficulty swallowing, dry mouth, and muscle weakness. Anyone who at the spread and experienced these symptoms should consult with a healthcare provider immediately.


“I deeply regret the concern and uncertainty this may cause you,” Smoliak said in a statement on the company’s website. “I am a chef that lives in a culture of food safety. I have an unwavering commitment to keeping your food safe with standards that go beyond regulatory requirements. I acknowledge that my best efforts failed and I am sorry.”

Beef Thai Red Curry Fusion Recipe - 8-Qt. Pressure Cooker

Entered for safe-keeping, adapted from pressurecookerdiaries.com. I estimate that this will fit into a 6-quart Pressure Cooker without the rice or else an 8-quart cooker with the rice. This relies on a jar of McCormick's Thai Kitchen Red Curry Paste, tailored for U.S. consumption, so it is likely milder than more authentic red curry pastes. (The Thai Kitchen fish sauce is known to be milder than Tiparos. If using Tiparos, use 1 tsp. instead of 1 Tbsp.) Note that potatoes are rarely used in Thai cuisine, so this may be more Malay or Indian than Thai.

Oregon Campylobacter Cluster Prompts Raw Oyster Recall

The Oregon Health Authority has announced the investigation of a cluster of three Campylobacter cases among Oregon residents who consumed raw oysters. The oysters came from two different markets in Lane and Coos counties. The oysters were harvested from Coos Bay Oyster Company of Charleston, Oregon. Campylobacter is an organism that can cause serious and some times fatal infections in young children, frail or elderly people, and others with weakened immune systems.


The three Oregon patients who became ill with Campylobacter coli (a less common species of Campylobacter) reported illness after eating raw oysters between January 15-20, 2014. All patients were males between 50-75 years of age. Of the three patients, two were hospitalized and are reportedly recovering well.


On January 30, Coos Bay Oyster Company recalled Plastic Tubs (1/2 gallon, quart, pint, half – pint), Coos Bay Oyster Co., Raw/Ready – to – eat Shucked Oysters, with sell by dates from January 15 – February 17, 2014 because they have the potential to be contaminated with Campylobacter. On January 31, the recall was expanded to include all of its shellstock oysters in red onion sacks containing five (5) dozen shellstock oysters (various sizes) with a Coos Bay Oyster Co. label and shellstock tags with various harvest dates (December 2013-January 2014).


The recall is the result of an epidemiologic investigation of a Campylobacter outbreak in Oregon. There have been three (3) confirmed reported cases of Campylobacter illness related with the consumption of raw shucked oysters to date.


The oysters were distributed through wholesale dealers and retail stores in Oregon and California.


Coos Bay Oyster Company has ceased the production and distribution of the product as the Oregon Department of Agriculture (ODA).


Healthy persons infected with Campylobacter often experience diarrhea, headache and body ache, cramping, abdominal pain, and fever within two (2) to five (5) days after exposure to the organism. The diarrhea may be bloody and can be accompanied by nausea and vomiting. The illness typically lasts one (1) week and some infected persons do not have any symptoms. In persons with compromised immune systems Campylobacter occasionally spreads to the bloodstream and causes a serious life threatening infection.
